I love a martini just as much as the next person, and I’ve been toying with the idea of a tomato one this summer. This tomato martini is sweet and briny, and can be batched ahead of time, too. (Martini’s at the ready, yes, please?)
This drink is savory by nature and adds just the perfect amount of brininess from pepperoncini juice. I love my martinis extra dirty, and I wanted to explore another pickly option in this martini, with some hint of heat and spice. But at first, when I was developing this recipe, I initially just wanted it spicy, so I tried it with muddled jalapeno. It was good, fine… but not what I was looking for, so I looked around in what I had and behold:
For my second test, I tried it with pepperoncini juice. It was briny, tangy, and had the hint of spice I was looking for with the jalapeno, with it still tasting classic. A lil’ drizzle of olive oil to garnish and a small cherry tomato on a cocktail pick to top with, and we have us a nice summer cocktail that I know for me will be on repeat.
By the way, chilling your glass is non-negotiable!
